What's for Dinner Dilemma #1

Dilemma:  Fridge and freezer contents not terribly exciting and there's not enough of anything to feed a family of 4, except eggs.  We have:

  • eggs

  • 1 onion

  • leftover uncooked bacon

  • 1/4 of a bag of shredded potatoes (maybe 1-1/2 cups)

  • 4 "end-of-the-bag" shredded cheeses (maybe 1 cup total)

  • a handful of spinach leaves


Answer: 

One-Pan Everything-in-the-Fridge Frittata


Prep time: 15 minutes

Cook time: 20-25 minutes


6 slices of bacon (chopped into small pieces)

1/2 medium onion (chopped)

3 garlic cloves (minced)

1-2 tbsp. olive oil

1-1/2 cups frozen shredded potatoes

10 eggs

1/2 cup half and half

1 tsp. salt

1 tsp. pepper

1 tsp. italian seasoning or dried thyme

handful of fresh spinach leaves (chopped)

1/2 cup shredded/grated parmesan cheese

1-1/2 cups shredded cheeses (your choice - I used colby, mozzarella, parmesan, & manchego, OK this wasn't shredded, until I used my grater but it worked great.)


Preheat oven to 350.


In a large skillet (preferably a non-stick one that you can put in the oven) saute the bacon, garlic and onion on medium heat until bacon is cooked through and onion is nearly carmelized.  Add in oil and potatoes.  Cook 4-5 minutes, stirring occasionally, just to start the cooking process for the potatoes.  Remove from heat.


In a large bowl, whisk the eggs, half & half, spices, spinach & parmesan cheese until thoroughly blended.


With the back of the spoon, gently press the potatoes down into the skillet to form an even layer of "crust".  It doesn't really crust, just make it even and cover the bottom of the pan.  Gently and evenly pour the egg mixture over the potatoes.  Do not mix!


Bake at 350 for 10-15 minutes until the eggs are not quite set.  Top the eggs with the shredded cheeses and continue baking until cheeses melt and bubble (about 10 minutes).


Gets the "Best dinner EVER!" and the "Hey it looks like pizza!" comments from the 11-year-old "almost-vegetarian" and the 8-year-old "I-don't-like-spinach-or-anything-else-green-machine".  They gobbled it down and BARELY made room for the cinnamon rolls we served for dessert!
